Ingredients:
- 3 tbsp. Olive-Me & Co.’s Habanero, Citrus Habanero, Roasted Chile or Garlic Jalapeno Olive Oil
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1/2 cup red onion, thinly sliced
- 1 cup zucchini, half-moon sliced
- 1 cup broccoli florets
- 8oz firm tofu, cut into large chunks OR 3 chicken breasts, thinly sliced
- 1 garlic clove, minced
- 1/2 cup teriyaki sauce
- 2 cups bok choy, sliced
- 1/4 tsp. ground black pepper
- 1/4 tsp. sea salt
- 1/2 cup snow peas
- 1 tbsp. sesame oil
Instructions:
- Begin preparing and cutting all vegetables and pre-measure your other ingredients .
- In a wok or large skillet, heat 2 tbsp. of your choice of Olive-Me & Co.’s spicy oil over high heat.
- Once hot, add the peppers and onion, stirring constantly. While continuing to stir, add the broccoli, chicken or tofu, garlic, and teriyaki sauce. Cook for 2 minutes while still stirring.
- Add the bok choy, black pepper and salt and continue to cook; until crisp-tender or about 2 minutes.
- Stir in the snow peas, remaining tbsp. of olive oil and 1 tbsp of sesame oil.
- Remove from heat and serve immediately over rice or noodles.
Optional: Top with toasted nuts… we like peanuts or almonds! Garnish with freshly chopped green onions.
Notes: Switch up your protein! You can also use steak, pork, or shrimp for this recipe.
