This unique twist on a fall favourite creates an incredible moist and delicious treat that is hard to resist.
Ingredients
- 1 ½ cup sugar
- 1 ½ cup Olive-Me & Co. Blood Orange Olive Oil
- 2 large eggs
- 1 ½ cup pumpkin puree
- 1 ½ cup all-purpose flour
- ½ tsp ground cloves
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ baking soda
- ¼ tsp salt
- ½ cup coarsely chopped walnuts or roasted pumpkin seeds
Directions:
- Preheat the oven for 350 degrees.
- Butter and flour one 9x5x3 – inch loaf pan. Beat sugar and oil in large bowl to blend. Mix in egg and pumpkin. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl. Stir into pumpkin mixture in 2 additions. Mix in walnuts or pumpkin seeds if desired.
- Divide batter equally between prepared pans. Bake until tester inserted into center comes out clean, about 1 hour 10 minutes. Transfer to a rack and cool for 10 minutes. Using a sharp knife cut around the edges of the pan to loosen the loaf. Turn the loaf out onto the rack and cool completely.
