Olive-Me & Co.’s Caramelized Onion Glazed Meatloaf

Ingredients:

• 1lb ground beef
• 1lb ground pork
• 1 cup toasted plain breadcrumbs
• 1 tsp. crushed garlic
• 1 medium onion, finely diced
• 1/2 cup fresh parsley, chopped
• 2 tsp. italian herb seasoning
• 1 egg
• 1 tsp. Worcestershire sauce
• 1 tbsp. Olive-Me & Co.’s Arbequina Extra Virgin Olive Oil
• Roothams Onion Roasted Garlic Jelly to coat the top

Instructions:

1. Preheat the oven to 350 degrees.
2. Lightly grease a loaf pan with Olive-Me & Co.’s Arbequina Olive Oil, set aside.
3. Drizzle olive oil in a pan and sauté diced onions over medium heat. Cook until translucent.
4. Mix the cooked onions with all remaining ingredients; press into the loaf pan.
5. Bake for 45 minutes.
6. Brush the top of your meatloaf with Roothams Onion Roasted Garlic Jelly. Continue to cook for an additional 10-15 minutes.
7. Serve hot with your choice of sides (we like green beans and mashed potatoes!)
